It disappeared from most menus for a long stretch because brewing loose leaf mid-shift isn\u2019t fast. All of it carries tannin, the compound that gives red wine and strong black tea their dry, structuring pucker.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Herbal tisane<\/strong> covers infusions like buchu, rooibos, honeybush and chamomile. No Camellia sinensis, so no tannin. These bring aroma and flavour without adding grip.<\/p>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-group alignfull has-white-color has-black-background-color has-text-color has-background\" style=\"padding-top:5em;padding-right:1em;padding-bottom:5em;padding-left:1em\"><div class=\"wp-block-group__inner-container is-layout-constrained wp-container-core-group-is-layout-6d749a03 wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" style=\"font-size:40px\"><strong>Three ways to get tea into a cocktail<\/strong><\/h2>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">Infusion<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Steep loose leaf or tea bags directly into your base spirit, whether gin, vodka or rum, then strain. No dilution, full flavour transfer. Tannic teas (green, black) extract fast: start around 3g per litre for a 10-minute steep. Low-tannin tisanes can go heavier, closer to 10g per litre, since there is less risk of over-extracting into bitterness.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Syrup<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Brew a concentrate, then combine it 1:1 with sugar to make a tea syrup. Double-steeping keeps the flavour from getting diluted out in the second step: brew hot, strain, then use that liquid to build the syrup rather than starting from water.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Cordial<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Take the syrup above and add 2% acid (citric, malic, or ascorbic) by weight, plus a small percentage of neutral spirit if you want it shelf-stable. This is the format that gets tea closest to doing a vermouth\u2019s job: body and lift, no ABV commitment.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"has-larger-font-size wp-block-paragraph\">A pinch of salt and a dash of vinegar in a tea syrup isn\u2019t a gimmick. Both stabilise the mix and sharpen the flavour that would otherwise go flat and one-note.<\/p>\n<\/blockquote>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-media-text alignwide has-media-on-the-right is-stacked-on-mobile is-vertically-aligned-center is-image-fill-element\" style=\"grid-template-columns:auto 40%\"><div class=\"wp-block-media-text__content\">\n<h3 class=\"wp-block-heading has-larger-font-size\"><strong>WHERE TEA EARNS ITS PLACE ON A MODERN LIST<\/strong><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Tea\u2019s biggest opportunity right now isn\u2019t as a flavouring. It\u2019s as a structural ingredient, doing the job usually left to vermouth, dairy or aged spirit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A tannic tea cordial can stand in for vermouth\u2019s body in a Martini-style build. An over-extracted tea can mimic the dry weight of a barrel-aged spirit in a zero-proof serve. None of that requires more sugar. Buchu is a tisane, a herbal infusion with no Camellia sinensis in it, and therefore no tannin. It is grouped with tea because it is traditionally drunk the same way, but it behaves differently behind the bar: aroma without structure.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">What\u2019s the difference between oolong and milky oolong?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Milky oolong refers to specific cultivars, Jin Xuan chief among them, with a naturally creamy, buttery character from compounds produced during processing. It isn\u2019t a flavour added after the fact. It is a trait of the leaf itself.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How much tea should I use in a syrup?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Brew double-strength, so steep, strain, then use that liquid rather than water to build the 1:1 sugar syrup.
