This one’s about what we’ve been working on all autumn: our Winter Menu 2025.


WINTER DOESN’T HAVE TO BE HEAVY
Winter drinks often get a bad rap → too sweet, too rich, too much of everything. But we like to think about the season differently. For us, it’s not about being heavy. It’s about depth. Balance. A little warmth, and a lot of character.
That’s where this year’s menu began. We wanted flavours that bring comfort but still feel alive. Something bright to cut through the cold, something bold to carry the night.
THE LINEUP
We went back through our favourites and tuned them for the season. Flavours that feel
familiar but land just right when the temperature drops.

- Thyme & Lemon → crisp, herbal, and quietly uplifting. Like a walk outside before service.
- Mango & Miso → sweet meets savoury in a way that surprises you every time. Umami
sunshine. - Mojito → clean, classic, effortless. A reminder that freshness works year-round.
- Ginger & Lemon → sharp, warming, and always the first to run out. A winter essential.
- Raspberry, Strawberry & Buchu → bright, layered, and unapologetically vibrant.
- Blackberry & Haskap → deep, jammy, with a touch of Nordic wildness.
- Elderflower & Jasmine → floral, delicate, and quietly addictive.
- Passionfruit & Milky Oolong → creamy, exotic, and built to turn heads.
- Anaperitivo → bitter, complex, and perfect for slow evenings behind the bar.
All made the same way we’ve made since day one:
by hand, from raw, organic ingredients. No shortcuts. No additives. No nonsense.

Every flavour comes in our Bag-in-Box format, which means less lifting, less waste, and more space for what matters: good service.

WHERE IT STARTED
This menu didn’t come out of the boardroom.
It came from conversations… With bartenders, café owners, and friends who wanted drinks that actually make sense in the middle of winter.
A few late-night tests, a few “this might work” moments, and suddenly, we had it: a lineup
that feels like BITE → bold, clean, and alive.
