How to Give Non-Alcoholic Drinks Body and Mouthfeel Without Dairy
Mouthfeel in a non-alcoholic drink comes from four levers: tannin (grip), viscosity (weight), carbonation (lift), and aroma (perceived creaminess). Dairy solves for weight and aroma at once, but it isn’t the only ingredient that does. Milky oolong solves for aroma, tannin extraction solves for grip, and both stack without adding fat.

Take the alcohol out of a drink and you take out more than the buzz. Spirit and cream both carry weight, and a thin non-alcoholic build shows it immediately. The instinct is to reach for dairy or a nut milk to fix it. That works, but it isn’t the only route, and it’s not always the right one for a menu that needs the drink to travel, hold on ice, or sit next to a dessert course without competing with it.
Mouthfeel isn’t one thing. It’s four separate levers, and most thin non-alcoholic drinks are only missing one or two of them.
The four levers
Tannin, for grip
Tannins are the compounds in tea (and red wine) that bind to proteins in saliva and produce that dry, structuring pucker, the sensation cocktail people usually associate with barrel-aged spirit. A tannic tea, over-extracted on purpose, can replicate that dry weight in a zero-proof serve. This is a texture lever, not a flavour one. It works even in a drink where the tea flavour itself is kept subtle.
Viscosity, for weight
Actual thickness on the tongue. Rich syrups (2:1 sugar to water rather than 1:1), a small amount of aquafaba, or a controlled reduction all add real viscosity without dairy fat.
Carbonation, for lift
The fastest lever to pull. Bubbles change how a drink feels in the mouth and how its aromatics reach the nose, and carbonic acid adds a trace of acidity too. It’s the reason a flat mocktail and a sparkling one built from the same base can taste like two different levels of effort.
Aroma, for perceived creaminess
This is the one bar teams skip, and it’s the one with the most research behind it. Creaminess isn’t purely physical. Sensory science treats it as a multimodal perception built from actual viscosity and mouth-coating plus olfactory cues the brain reads as dairy. Get the aroma right and a drink can read as creamier than its actual texture would suggest.

WHERE MILKY OOLONG FITS
Milky oolong, the Jin Xuan cultivar most commonly, is unusual because it can pull two of these four levers in a single ingredient. As a true tea, light oxidation during processing produces natural ketone compounds that read to the nose as buttery and creamy, with no dairy involved. That is the aroma lever. Because it is still tea, it also carries tannin, which is the grip lever.
The catch is extraction technique, not the leaf. Steep it cold and gentle, well under boiling, and both the milky aroma and a moderate, pleasant tannin come through together. Push it hot or steep it long and the same leaf turns leafy and bitter, and the aroma that was reading as cream starts reading as over-brewed tea instead. Technique is the whole game here. The compounds are already in the leaf, and extraction either shows them or wrecks them.
Stacking the levers without dairy
A non-alcoholic drink built to have real body doesn’t need to pick one lever. It needs two or three, deliberately:
- A tannic tea (milky oolong, or a straight black or green tea) for grip and, if it’s a milky cultivar, aroma
- A 2:1 syrup or a small amount of aquafaba for actual viscosity
- Carbonation on the pour for lift, if the format allows it
- Salt in trace amounts, the same move tea syrup makers use, to round the sweetness without adding more sugar
None of this requires replacing dairy with a substitute that behaves like dairy. It requires treating body as four different problems instead of one.
