Ingredients: 30 ml BITE Raspberry, Strawberry & Buchu
30 ml Havana Club 3 Rum
25 ml Lemon juice
Top with Mascarpone & Amaretto foam

Garnish: Sprinkle with digestive crackers

Difficulty: Level 3 - Advanced bartending experience

Instructions: Mascarpone & Amaretto foam:
150 ml Adriatico Amaretto Bianco
250 g Mascarpone Cheese
1 eggwhite
1. Combine in a siphon and set in the freezer for 20 minutes.
2. Shake hard before use. Keep chilled at all times.

Serving the cocktail:
1. Shake the 3 first ingredients with ice
2. Double-strain into a cocktail glass
3. Spray the Mascarpone and Amaretto Foam on top and
4. Sprinkle with crushed digestive crackers
