Ingredients: 25 ml BITE Mango & Miso
50 ml La Escondida Mezcal
10 ml Yuzu Saké
15 ml Lemon juice
20 ml Eggwhites
2 dashes Grapefruit bitters

Garnish: Oxalis leaf

Difficulty: Level 2 - Medium bartending experience

Instructions: 1. Combine all ingredients in a shaker
2. Dry shake to foam up the eggwhites
3. Add ice and shake again until properly chilled and diluted
4. Double strain into a coupe
5. Garnish with an oxalis leaf.
